GAPS-Style Cut-Out Cookies (Sugar Cookie Vibe)


These are lightly sweet, soft-buttery cookies designed for rolling and cutting into shapes — stars, hearts, circles, etc. Think classic sugar cookie feel, just gently reworked with whole foods.


Makes: ~20 small cookies


Ingredients

  • 2½ cups blanched almond flour

  • ¼ tsp baking soda

  • ¼ tsp sea salt

  • 2 large eggs

  • ⅓ cup melted butter or ghee (cooled slightly)

  • ¼ cup raw honey

  • 1 tsp vanilla extract

(Optional for holiday flavor: pinch cinnamon or nutmeg)


How to Make

  1. In a bowl, mix almond flour, baking soda, and salt.

  2. In a separate bowl, whisk eggs, butter/ghee, honey, and vanilla.

  3. Combine wet and dry ingredients until a soft dough forms.

  4. Chill dough 30–45 minutes (this is key for cut-outs).

  5. Preheat oven to 325°F (165°C).

  6. Roll dough between two sheets of parchment to about ¼ inch thick.

  7. Cut shapes and transfer carefully to a lined baking sheet.

  8. Bake 8–10 minutes, just until set and lightly golden on the edges.

  9. Cool completely before moving — they firm up as they cool.
