GAPS-Style Cut-Out Cookies (Sugar Cookie Vibe)

These are lightly sweet, soft-buttery cookies designed for rolling and cutting into shapes — stars, hearts, circles, etc. Think classic sugar cookie feel, just gently reworked with whole foods.
Makes: ~20 small cookies
Ingredients
2½ cups blanched almond flour
¼ tsp baking soda
¼ tsp sea salt
2 large eggs
⅓ cup melted butter or ghee (cooled slightly)
¼ cup raw honey
1 tsp vanilla extract
(Optional for holiday flavor: pinch cinnamon or nutmeg)
How to Make
In a bowl, mix almond flour, baking soda, and salt.
In a separate bowl, whisk eggs, butter/ghee, honey, and vanilla.
Combine wet and dry ingredients until a soft dough forms.
Chill dough 30–45 minutes (this is key for cut-outs).
Preheat oven to 325°F (165°C).
Roll dough between two sheets of parchment to about ¼ inch thick.
Cut shapes and transfer carefully to a lined baking sheet.
Bake 8–10 minutes, just until set and lightly golden on the edges.
Cool completely before moving — they firm up as they cool.
