GAPS‑Friendly Carob Brownies

Soft, fudgy, cocoa‑free brownies perfect for family holiday baking.
Servings: ~12 small squares
Texture: Rich & tender, not crumbly
🧾 Ingredients
1½ cups blanched almond flour
2–3 tbsp carob powder
¼ tsp baking powder
¼ tsp sea salt
3 large eggs
¼ cup melted butter or ghee
¼ cup raw honey
1 tsp vanilla extract
Optional: 2–3 tbsp chopped carob chips* or finely chopped dates
*Make your own quick carob chips by mixing carob powder with a little coconut oil and honey, then chilling until firm
Instructions
Preheat the oven to 350°F (175°C) and line an 8×8 baking pan with parchment.
In a bowl, mix together almond flour, carob powder, baking powder, and salt.
In a separate bowl, whisk eggs, melted butter (or ghee), honey, and vanilla.
Combine the wet and dry ingredients, stirring until smooth.
Fold in carob chips or dates if using.
Spread batter evenly in the prepared pan and bake 20–25 minutes, until the edges are set and a toothpick comes out mostly clean.
Cool completely before cutting — cooling helps the brownies set.
Serving + Storage
Slice into squares and serve with a dollop of whipped coconut cream or a sprinkle of cinnamon.
Store in the fridge up to 5 days or freeze up to 3 months.
Variations & Holiday Fun
Peppermint Twist: Add ½ tsp peppermint extract to the batter (if tolerated) and serve with peppermint‑infused coconut cream.
Nutty Brownies: Stir in 2 tbsp finely chopped walnuts or pecans for extra texture.
Orange Spice: Add ½ tsp orange zest and a dash of cinnamon for a festive flavor.
