Almond Flour Waffles


Ingredients (makes 4–5 waffles)

  • 2 cups blanched almond flour

  • 4 eggs

  • ¼ tsp baking soda

  • ¼ tsp sea salt

  • 3 tbsp melted butter or ghee

  • ¼ cup milk or buttermilk

  • 1–2 tbsp raw honey (optional)

  • ½ tsp vanilla extract (optional)


How to Make

  1. Preheat waffle iron and lightly grease.

  2. In a bowl, whisk eggs, melted butter, milk, honey, and vanilla.

  3. Add almond flour, baking soda, and salt. Mix until smooth and slightly thick.

  4. Let batter rest 3–5 minutes to hydrate the almond flour.

  5. Pour batter into waffle iron and cook until golden and set.

  6. Allow waffles to rest 1 minute before removing — this helps them stay moist.


How We Keep These Waffles Moist (almond flour can be rather dry)

  • Extra eggs add structure and softness

  • Milk or buttermilk hydrates almond flour

  • Healthy fats (butter or ghee) prevent dryness

  • Resting the batter allows almond flour to absorb moisture evenly

  • Cooking low and slow avoids over-drying


Serving Ideas

  • Butter or ghee

  • Warm fruit compote

  • Yogurt (later GAPS)

  • Honey or date syrup


Gentle Parent Note

Almond flour waffles are naturally softer than grain-based waffles. For kids who prefer predictable textures, these are best enjoyed warm and freshly made or reheated gently rather than toasted.
